CARROTS Daucus carota

Early carrots can be sown by late April. Can take up to 3 weeks to germinate; keep rows from drying out for faster emergence. Sow carrots for winter storage in mid-late June. Thinning is critical: At 3″ high thin to 1/2″ apart, at 6″ thin again to 1″ apart. Minimal germination temperature 40°, optimal range 60–85°, optimal temperature 80°, emergence takes 17 days at 50°, 10 days at 59°, 6 days at 77°, 48% normal seedlings at 41°, 96% normal at 68°.

TURNIPS & RUTABAGAS Brassica rapa

Thinning is critical for full-sized roots. Turnips have a shorter growing season and are not as cold-hardy or as good keepers as rutabagas. Turnips are best picked before they get large and fibrous. Rutabagas, also known as Swedish turnips or Swedes, form enlarged roots above ground with a finely branched system below. Minimum germination temperature for turnips 40°, optimal range 60-95°, optimal temperature 75°, 79% normal seedlings at 50°, 98% normal at 59°. See also #6403 American Purple Top Rutabaga.

Height: 10-12 inches

SPINACH Spinacia oleracea

Very hardy. Must be planted as soon as the ground can be worked in the spring to avoid early bolting. For fall crop try late Jul–Aug sowing; to overwinter, sow late Aug–Sept. Heavy nitrogen requirements, but avoid applying high-nitrogen fertilizers shortly before harvest to prevent high nitrate levels in the leaves. Pick large leaves often for heavier production. Heat, crowding and long day-length (over 14 hours) triggers premature bolting. To retard bolting, avoid hot-weather planting, use wider spacing and irrigate or use shade cloth. Minimum germination temperature 35°, optimal range 45–65°, optimal temperatures 55–60°, emergence takes 23 days at 41°, 12 days at 50°, only 5 days at 77°, however 91% normal seedlings at 50°, 82% at 59° but only 52% at 68° and a mere 28% at 77°. Spinach seed will not germinate in soil temperatures above 85°.

Sowing Method: Direct Sow/Indoor Sow

Days to Maturity: 40-48 days

Height: 10-12 inches

Spread: 4 inches

LETTUCE Lactuca sativa

All lettuce is open-pollinated. May be started indoors in March and at regular intervals thereafter, or sowed outdoors as soon as ground can be worked. Most varieties won’t germinate in soil temperatures above 75°. Hardy. All save icebergs tolerate heavy frost. Grow best in cool weather with ample moisture, many kinds suffer bottom rot and tip burn in heat; select summer varieties carefully. Use shade cloth to keep summer lettuce tender and sweet longer. Allow your succession planting for fall to go to seed! It lends beauty to the fall garden and will give you wonderful early greens in all but the coldest locations. Best time to harvest lettuce? Shortly after dawn. USDA research has shown that lettuce leaves contain almost double the sugars at 7 am as at 2 pm. Sow every 2 weeks for continuous supply. Lettuce will not head unless thinned frequently and ruthlessly to final distance of 1′. Heavy nitrogen feeders. Minimum germination soil temperature 35°, optimal range 40-80°, optimal temperatures 70-75°, emergence takes 15 days at 41°, 7 days at 50°, 3 days at 68°, 99% normal seedlings at 77° but only 12% normal at 86°.

Due to popular demand, we’ve created a more affordable version of our durable wood and solar glazing hoop houses.

With freezing nights here in Central Oregon, a hoop house is one of the best ways to add a layer of protection for your tender plants. Keep in mind that on particularly cold nights (especially below freezing!) it is best to cover your hoop houses with an additional heavy layer or add some sort of heating device to the hoop house. Starting your plants indoors and ‘hardening them off’, essentially introducing them to outside temperatures gradually, is always a good idea, but cold weather is no match for even the most hardy basil or tomato plant.

Our econo-hoop houses come in two sizes:

4’ x 4’ = $139.95 (Kit form, you assemble) $159.95 (assembled)

4’ x 8’ = $199.95 (Kit form, you assemble) $229.95 (assembled)

This recipe makes eight pint jars or four quart jars of canned pears. These make great gifts, or keep for yourself to have the tastes of summer stored in your pantry all winter.

8 to 12 pounds pears

1 batch hot light or medium syrup (see below)

1. Prepare your canner, jars and lids (for more info, see the Ball Book of Complete Home Preserving, which you can find at Celebrate the Season)

2. Prepare the pears by peeling and coring them with a melon baller.

3. In a large stainless steel saucepan, over medium-low heat, warm pears, one layer at a time, in syrup until heated through, about 5 minutes.

4. Using a slotted spoon, pack hot pears, cavity side down and overlapping layers, into hot jars to within a generous 1/2 inch of top of jar. Ladle hot syrup into jar to cover pears, leaving 1/2 inch headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot syrup. Wipe rim. Center lid on jar. Screw band down until resistance is met, then increase to fingertip-tight.

5. Place jars in canner, ensuring they are completely covered with water. Bring to a boil and process pint jars for 20 minutes and quart jars for 25 minutes. Remove canner lid. Wait 5 minutes, then remove jars, cool and store.

How to Make the Syrup

In a stainless steel saucepan, combine sugar and water. Bring to a boil over medium-high heat, stirring until sugar is dissolved. Reduce heat to low and keep warm until needed, taking care not to boil the syrup down. Allow 1 to 1 1/2 cups of syrup for each quart jar of fruit.

Light Syrup: 2 1/4 cups sugar and 5 1/4 cups of water: 6 1/2 cups of syrup

Medium Syrup: 3 1/4 cups sugar and 5 cups water: 7 cups of syrup

Need pears? We’ve got a bounty of fresh Hood River pears, available in 40 pound boxes, or by the pound. We also sell canning supplies! Call 541-244-2536 for more info.
